What better place to begin a blog about sustainable food than...Florence, Italy?! I attended a conference in Florence, Italy and enjoyed discussing the sustainable food system in the country of my ethnic origin. It is clear that Italians interest in and access to highly processed food is greatly reduced as compared to our US food system. Home cooking traditions are also still clearly a priority. Also - their dedication to using all parts of food, including animal parts we would discard greatly reduce their food waste. Beautiful people, beautiful place, beautiful food!
